I'm looking for some good healthy snacks. I want to eat something like toast or a sandwich, but I need some jam or mayo for a spread—and that's not healthy! I wanted a quick spread like mayo that is easy to make with simple ingredients, so I tried this. I didn't know how it would taste, but after I made it, the taste was awesome! You should also try this creamy, protein-rich egg spread made with thick curd instead of mayonnaise. Perfect for sandwiches, wraps, toast, burgers, crackers, or salads. Made within 15 minutes!

Ingredients

  • 2 boiled eggs
  • 0.5 cup thick curd (Greek yogurt or hung curd)
  • 1 tsp lemon juice
  • 0.5 tsp black pepper powder
  • 0.5 tsp roasted cumin powder (optional)
  • 1 tsp mustard sauce (optional)
  • Salt, to taste

Method

  1. Boil the eggs and let them cool. Peel the eggs.
  2. Add the boiled eggs (I prefer medium-boiled eggs), thick curd (I used Greek yogurt for extra protein), lemon juice, black pepper powder, roasted cumin powder (I used this, but you can skip it if you want), salt according to taste, and mustard sauce (optional) to a blender.
  3. Blend until smooth and creamy.
  4. Taste and adjust the seasoning if needed.
  5. Serve immediately or chill for 15–20 minutes.
You can serve this as a spread on whole wheat bread, toast, sandwiches, wraps, burgers, crackers, or salads. Here, I served it with white bread toasted with ghee.
