Stuffed Brinjal Curry

Let me introduce you to my most frequently made curry with brinjal—spicy, masaledar, and the most delicious curry! It is one of my favorite side dishes to pair with rice and sometimes chapatis. This delicious stuffed brinjal curry is made with aromatic spices and cooked until perfectly tender. It pairs wonderfully with rice, chapati, or roti.

Ingredients

  • 4 medium brinjals (eggplants)
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 0.25 tsp fenugreek seeds (methi seeds)
  • 2.5 dried red chilies (2–3)
  • 5.5 garlic cloves (5–6)
  • 1 inch ginger
  • A pinch of hing (optional)
  • 1 small onion, chopped
  • 1 tomato, cut into large pieces
  • 0.25 tsp turmeric powder
  • Salt, to taste
  • 0.5 cup water
  • 0.5 tsp dried kasuri methi

Method

  1. Wash the brinjals and make two slits in a cross shape, keeping the stem intact. Do not cut them all the way through.
  2. Heat 1 tbsp oil in a pan. Add the cumin seeds, coriander seeds, fenugreek seeds, dried red chilies, garlic, ginger, and hing (optional). Sauté for 2–5 minutes. Let the mixture cool, then blend it into a smooth paste.
  3. Stuff the prepared spice paste into each brinjal.
  4. Heat the remaining 1 tbsp oil in a pan. Add the chopped onion and sauté until soft.
  5. Add the turmeric powder, the remaining spice paste, and salt. Mix well.
  6. Add the stuffed brinjals, the tomato pieces, and the water.
  7. Cover and cook on low heat for 15–20 minutes, turning the brinjals gently until they are tender.
  8. Sprinkle the dried kasuri methi and mix gently.
  9. Serve hot with steamed rice, chapati, or roti.

💡 Tips & Tricks

  • Slitting Brinjals: Keep the stems attached while slitting so the brinjals hold their structure and hold the masala properly while cooking.
  • Soak in Salt Water: You can place the cut brinjals in salted water for 10 minutes to prevent browning and reduce any bitterness.
  • Low & Slow Cooking: Cover and cook over low heat so the brinjals become soft and melt-in-the-mouth without burning the spice paste.
